Za’atar Sandwich with Labneh, Cucumber, Tomatoes, Olives & Olive Oil

Ingredients

  • 1 large pita bread (or 2 small ones)

  • 2-3 tablespoons labneh

  • 1 tablespoon za’atar

  • 2–3 tablespoons extra virgin olive oil

  • ½ cucumber, thinly sliced

  • 1 small tomato, diced or thinly sliced

  • 4–5 black or green olives, pitted and chopped

  • Salt (optional, to taste)

  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Warm the pita:
    Lightly heat the pita in a dry skillet or toaster for 30 seconds on each side until soft and pliable.

  2. Mix the za’atar and olive oil:
    In a small bowl, combine za’atar and extra virgin olive oil to form a fragrant paste.

  3. Assemble the base:
    Spread labneh evenly over one side of the pita.

  4. Add the toppings:
    Layer cucumber slices, tomato, and chopped olives over the labneh. Spoon or drizzle the za’atar-olive oil mixture on top.

  5. Season and fold:
    Add a small pinch of salt if desired, and fold the pita in half or roll it like a wrap.

  6. Serve:
    Serve immediately, or wrap in parchment for an on-the-go snack. Pairs beautifully with mint tea or a side of yogurt

Tips

  • For extra flavor, sprinkle a few fresh mint or arugula leaves before folding.

  • You can also toast the sandwich briefly for a warm, crispy version.
