Baked Cod with Olive, Garlic & Lemon

Ingredients:
2–3 cod fillets (about 150–200g each)
3 tbsp extra virgin olive oil
2 cloves garlic, minced
1 lemon (½ for slices, ½ for juice)
¼ cup green or black olives, sliced
Salt and freshly ground black pepper, to taste
Fresh parsley or thyme (optional, for garnish)
Instructions:
*Preheat the oven to 200°C / 400°F.
*Prepare the sauce:
In a small bowl, mix the olive oil, minced garlic, lemon juice, a pinch of salt, and pepper.
Place the cod fillets on a baking dish lined with parchment paper.
Drizzle the olive oil mixture evenly over the fish.
Scatter lemon slices and olives on top.
*Bake:
Bake for 15–20 minutes, depending on the thickness of your fillets.
The fish should flake easily with a fork.
Garnish with fresh parsley or thyme before serving.
Optional: drizzle a little more extra virgin olive oil right before serving for a rich aroma.
