Baked Cod with Olive, Garlic & Lemon

Prep time:

 15–20 min

Serves:

 2–3

Ingredients:

  • 2–3 cod fillets (about 150–200g each)

  • 3 tbsp extra virgin olive oil

  • 2 cloves garlic, minced

  • 1 lemon (½ for slices, ½ for juice)

  • ¼ cup green or black olives, sliced

  • Salt and freshly ground black pepper, to taste

  • Fresh parsley or thyme (optional, for garnish)

Instructions:

*Preheat the oven to 200°C / 400°F.

*Prepare the sauce:

    • In a small bowl, mix the olive oil, minced garlic, lemon juice, a pinch of salt, and pepper.

    • Place the cod fillets on a baking dish lined with parchment paper.

    • Drizzle the olive oil mixture evenly over the fish.

    • Scatter lemon slices and olives on top.

*Bake:

    • Bake for 15–20 minutes, depending on the thickness of your fillets.

    • The fish should flake easily with a fork.

    • Garnish with fresh parsley or thyme before serving.

    • Optional: drizzle a little more extra virgin olive oil right before serving for a rich aroma.
